Tortilla Chip Crusted Chicken

Have you ever heard of Siete? Some bloggers I follow constantly post stories eating their products. While walking down the aisle of Whole Foods, they caught my eye and I decided to finally try them. I bought the Lime chips and tried them the second I got home. For as healthy as they are it amazed me at how good they tasted. I waited until all my roommates got home to encourage them to try the chips too. They all loved it as much as I did, so much so that  the bag was empty by the end of the day. The next morning we were talking at breakfast and my roommate Ali jokingly said, "you should reach out to Siete about doing a partnership, we need more." Not expecting much, I reached out and sure enough, they were happy to send us some other flavors to try and review.

Saturday Night: It arrived. It meaning 6 beautiful bags of Siete tortilla chips in the flavors Lime, Nacho, and Sea Salt. I imminently opened the nacho ones as those were the ones I was most interested in tasting and they did not disappoint. They have a subtle kick but weren't spicy enough for me not to enjoy (I don't like spicy).

Sunday Night: Nacho chip bag was empty.

Monday: Every member of 6323 was back in the house meaning it was time to cook together. I decided upon a lime tortilla crusted chicken with guac dip and brussel sprouts on the side. It was amazing. We will do it again, and here is how you can try it too.

Ingredients:

  • Siete Lime Chips (personal preference and they'll be yours too once you try them)

  • Chicken

  • Flour

  • Egg

How To:

  1. Preheat Oven to 425.

  2. Wash and dry chicken. Hammer chicken to desired thickness.

  3. Crush Siete Lime Chips to desired size. The smaller the better it is in sticking onto the chicken.

  4. In three bowls place flour, whisked egg, and the crushed Siete chips.

  5. Dip the chicken in flour, making sure to cover as much as possible, then the egg, and lastly the tortilla. Gently pat the chips to the chicken.

  6. Lay chicken flat on lined cooking sheet.

  7. Place in the oven for 15-20 minutes. I like mine on thecrisper side so I wait until the chicken gets to a noticeable crisp color.

  8. Serve and enjoy!

My housemate Katherine made her famous guac (recipe coming shortly) and this was the perfect addition on top of the chicken. Wholly Guacamole would also work to eat with the chicken and is super convenient if you don't have guac making housemates like I do. I am excited to continue making these and will be on the lookout to find a healthier substitution for the flour. However the amount used is so insignificant that this really didn't bother me. I also look forward to trying this recipe with the nacho chips and you'll be sure to see more from me about my love for Siete.
