Elizabeth’s Lemon Loaf

I am so thankful to have a roommate who loves cooking and baking as much as I do. She has definitely inspired and motivated me to try new recipes. This one was her idea and she took the lead on this recipe. The yumminess of this loaf wouldn’t be possible without her. Also I recommend making double the batch because this goes fast.

Ingredients:

  • 2 Eggs

  • 3 lemons

  • 1/2 cup coconut oil

  • 3/4th cup sugar

  • 3/4th cup mylk of choice (I used oat)

  • 1/2 tsp salt

  • 1 tsp baking soda

  • 1 tbs lemon zest

  • 1.5 cups all purpose flour

  • 1 cup powdered sugar

dEATS:

  1. Preheat the oven to 350 degrees F.

  2. In a bowl mix together the eggs, juice from 2 of the lemons, coconut oil, sugar, mylk, salt, baking soda, lemon zest and flour.

  3. Put into a greased loaf tin and put in the oven for around 45 minutes.

  4. Let cool.

  5. For the glaze mix the powdered sugar and the juice from the last lemon and pour over the loaf.
