Cinnamon Roll Muffins
I was inspired by a post on Instagram to make these and my first attempt was not so hot. I basically followed their recipe to the T and I felt it wasn’t sugary enough and was really dense. For my second go about I experimented but used my vegan cupcake recipe as a base. You guys… its so good. Like insanely good.
Holiday Crack
What a fun name for a delicious cracker. It also goes by “Christmas Crack”, “Toffee Cracker” or “Cracker Candy.” Whatever you choose to call it, one this is for sure- it’s delicious and it’s super easy too. I remember making this in high school with my friends as it’s cool proof and fun to customize. I wanted to elevate the recipe and make it healthier and my roommates even think it tastes similar to a the Girl Scott’s Samoa Cookie which is definitely a compliment.
Mint CBD Puppy Chow
Puppy chow takes me back to my childhood days. It is pretty much a fool proof recipe and fun for everyone to make. I really wanted to make something special for my 420th post but CBD limits me to things that are unbaked. (CBD cannot be heated because it will lose its properties.) So I was thinking a lot about things I’ve been wanting to make and that would taste good with a minty CBD oil and Mint CBD Puppy Chow somehow came to mind. Obviously you can make this recipe without the CBD and just have a minty take on Puppy Chow, completely up to the user.
Vegan Coconut Cookie Dough Cups
Sorry not sorry for the food porn. When we decided to make this we actually were attempting to make twix bars. Well the recipe we adapted ended up tasting more like vegan coconut cookie dough cups and we aren’t the tiniest bit mad. These delicious cups will last forever if you keep them in the fridge but based on how delicious they taste I believe that statement is unlikely to happen.
Nutter Butter Cookies
You would have had a sad childhood if nutter butter cookies weren’t a part of it. I remember making the hashmarks with a fork on the cookies and feeling so proud of my work.
Vegan Chocolate Chip Cookies
These cookies are pretty amazing especially given the fact they are super clean and cater to a large range of eating preferences. Caution: these will be finished almost imminently after baking… you may want to double the recipe.

For my roommate’s birthday I wanted to make a healthy vegan vanilla cupcake. I found the recipe online and made a few alterations! I can’t believe I haven’t attempted a vegan cupcake before because these are seriously amazing and so easy to make. Not to mention they look so fun!

I don’t know about you guys, but I am easily scared away by baking that has a long list of ingredients in it. The solution- a seven ingredient banana bread with two of the ingredients being completely optional.
