Thai Peanut Noodles

Pasta is a huge staple in my diet. It’s easy, and if I use protein noodles like chickpea, they are a great source of nutrients. To mix up my pasta game, I came up with a Thai peanut sauce that works great on noodles, veggies, salads, really anything!

Ingredients:

  • 2 tbs peanut butter

  • 2 tbs coconut aminos (or soy sauce)

  • 1 tbs dijon mustard

  • 1 tbs honey

  • 1/3 cup water (or better if its the pasta water)

  • Optional: crushed up peanuts

How to:

  1. Combine the ingredients together.

  2. Pour over noodles, vegetables, salads… you name it!
