Lemon Coconut Cookies
This spring I have been obsessed with lemon and coconut flavors. And what better way to show my obsession than come up with a lemon coconut cookie recipe?! They are so delicious and oddly remind me of the lemon loaf I used to get at Starbucks as a kid. Also the longer these sit out, the more soft they get which is a plus for me!
Ingredients:
2 cups flour
1/4 cup shredded coconut
1 tsp baking soda
1/8 tsp salt
1/3 cup melted coconut oil
1/3 cup maple syrup
2 tbsp lemon juice
1 egg (if vegan just omit or sub flax egg)
zest from 1 lemon (use 3/4 of zest for batter, 1/4 for glaze)
1 tsp vanilla
Glaze: 3/4th powdered sugar, juice of 1 lemon, rest of zest)
How to:
Set the oven to 350 F
In a large bowl add the dry ingredients and mix
In a small bowl whisk the wet ingredients
Combine the wet ingredients into the dry and mix until combined
Shape into preferred cookie size and bake in the oven for 12-16 min (I like mine larger so I made 7)
Combine the glaze ingredients together in a small bowl
Pour the glaze over the cookies and enjoy!
