Lemon Coconut Cookies

This spring I have been obsessed with lemon and coconut flavors. And what better way to show my obsession than come up with a lemon coconut cookie recipe?! They are so delicious and oddly remind me of the lemon loaf I used to get at Starbucks as a kid. Also the longer these sit out, the more soft they get which is a plus for me!

Ingredients:

  • 2 cups flour

  • 1/4 cup shredded coconut

  • 1 tsp baking soda

  • 1/8 tsp salt

  • 1/3 cup melted coconut oil

  • 1/3 cup maple syrup

  • 2 tbsp lemon juice

  • 1 egg (if vegan just omit or sub flax egg)

  • zest from 1 lemon (use 3/4 of zest for batter, 1/4 for glaze)

  • 1 tsp vanilla

  • Glaze: 3/4th powdered sugar, juice of 1 lemon, rest of zest)

How to:

  1. Set the oven to 350 F

  2. In a large bowl add the dry ingredients and mix

  3. In a small bowl whisk the wet ingredients

  4. Combine the wet ingredients into the dry and mix until combined

  5. Shape into preferred cookie size and bake in the oven for 12-16 min (I like mine larger so I made 7)

  6. Combine the glaze ingredients together in a small bowl

  7. Pour the glaze over the cookies and enjoy!
