Vegetable Lo Mein

I absolutely love Chinese food but sometimes it makes me super bloated from all the salt and oil. My solution (as it always is) was to make my own version. And when I say this is amazing I am not lying, you must give it a try for yourself. I even used chickpea noodles for extra protein. 🥡🥢

Ingredients:

  • Noodles- I used Eat Banza for the protein but egg noddles work too

  • 1 diced Bell Pepper

  • 1 cup diced Onion

  • Handful of Spinach

  • 1 Garlic clove or a spoonful of refrigerated Garlic

  • Pinch of Sesame Seeds

  • 1/2 Tbsp Coconut Aminos

  • 2 Tbsp Sesame Oil

How to:

  1. Boil noodles and follow box directions.

  2. Chop pepper and onion. Throw onto a pan and sauté with oil for about 5 minutes.

  3. Add spinach, garlic, sesame seeds and coconut aminos.

  4. Turn off heat. Add noodles to pan and pour some sesame oil.

  5. Mix and enjoy!
