Bananas Foster French Toast

For this I just did your typical French toast recipe but used oat milk for the milk and low carb, low cal, high fiber bread. Oh and how could I forget the most important difference… some damn good caramelized bananas to top it off. Yah this is one for the books. Enjoy.

Ingredients:

  • 2 Eggs- I use Vital Farms

  • 2/3 Cup of Oatly Milk

  • 3 Shakes of Cinnamon

  • Dash of Vanilla Extract

  • Dash of Salt

  • Bread of Choice (I used a low carb, high fiber)

  • 1 Banana sliced

  • Granola- I used Kitch Fix

  • Maple Syrup

  • Optional: Miyokos (Vegan) Butter

How to:

  1. Add the eggs, mylk, cinnamon, vanilla extract and salt to a large shallow bowl.

  2. Blend the ingredients then dip the bread in, making sure to get it soaked.

  3. Spray a pan with olive oil and put it over medium heat. Once pan is warmed add the dipped bread.

  4. Just before flipping the bread add the granola to the top and flip. Cook until browned.

  5. In a separate pan spray with olive oil and put over medium heat. Add the banana.

  6. Sprinkle the bananas with cinnamon and constantly flip until browned.

  7. Take the french toast and top it with the caramelized bananas, more granola, maple syrup and butter.

  8. Enjoy this deliciousness.
