Holiday Crack
What a fun name for a delicious cracker. It also goes by “Christmas Crack”, “Toffee Cracker” or “Cracker Candy.” Whatever you choose to call it, one this is for sure- it’s delicious and it’s super easy too. I remember making this in high school with my friends as it’s cool proof and fun to customize. I wanted to elevate the recipe and make it healthier and my roommates even think it tastes similar to a the Girl Scott’s Samoa Cookie which is definitely a compliment.
I played around with a few recipes until I found one that worked perfectly while still using some healthier alternatives. This recipe makes two trays worth which I thought was perfect so I was able to decorate each differently. Also these are perfect to bring to holiday parties, school events, even give as gifts! It can also be made vegan by using vegan butter or another 1/2 cup of coconut oil. Can’t wait to see what you guys think!
Ingredients:
2/3 cup maple syrup
1/2 cup coconut oil
1/2 cup butter (if vegan use another 1/2 cup of coconut oil or Miyokos Vegan Butter)
2 bars of dark chocolate
1/2 cup Nut Butter (I used Peanut Butter)
Crackers (I used about 20 large ones)
Optional: Sprinkles, Marshmallows… whatever your heart desires.
How to:
Preheat your oven to 300 degrees F.
Line two trays with aluminum and then fill them with crackers in one thin layer. Try and get as much of the tray covered without layering the crackers.
In a medium microwaveable bowl add the butter and microwave in intervals until melted.
Add the coconut oil and peanut butter to the bowl and microwave in intervals until everything is smooth and mixed.
Pour the mixture in an even layer over the crackers using a spatula to spread and place in the oven for 7-9 minutes or until bubbling.
Take the trays out and let cool for 15-20 minutes. It should get hard to the touch.
Microwave both bars of chocolate in 30 second intervals and stir making sure it doesn’t burn.Once fully melted pour over crackers and spread with the spatula.
Add whatever ingredients you’d like or keep it as it is. Some ideas: sprinkles, marshmallows, cracker bits, chopped nuts, bacon, and/or sea salt. *note if doing marshmallows feel free to add back into the oven until golden.
Once decorated to your liking, put the trays in the fridge until they harden. After 30 minutes or so take the trays out and remove the tinfoil. If you let them fully harden it should peel right off.
Cut or break the crackers into pieces.
Enjoy! Store in the fridge or even the freezer to keep its hardness.
