Veggie Tacos

Ladies and gents boys and girls I present to you a fan favorite, a true staple in american’s diets… tacos!! But not just any tacos- veggie tacos. These are so yummy and will probably be devoured super quickly. Hope you enjoyed these as much as I did! Place you’ll have plenty of veggie leftovers to use for future meals.

Ingredients:

  • Zucchini

  • Butternut Squash

  • Onion

  • Bell Pepper

  • Avocado

  • 1 can of Black Beans

  • 1/2 cup Whole Foods Frozen Brown Rice

  • 2 Siete Foods Tortilla

  • Pinch of Hemp Seeds

How to:

  1. Cut the vegetables up and then in the oven roast zucchini, butternut squash, onion, and bell pepper on 450 for about 15 minutes. I would roast all of the vegetables so that you have leftover for the next day.

  2. Mash up the avocado and add salt and pepper.

  3. Heat up black beans.

  4. Follow the directions for the brown rice.

  5. Heat up a Siete tortilla on a warm pan for 20-30 seconds.

  6. Create your tacos by adding the guac, veggies and black beans.

  7. Top with hemp seeds and enjoy!
