Nutter Butter Cookies
You would have had a sad childhood if nutter butter cookies weren’t a part of it. I remember making the hashmarks with a fork on the cookies and feeling so proud of my work. Well thank god Rachaels Good Eats brought them back into the world of Instagram. So I used her recipe and changed a few things up. You need to make this ASAP and relive your childhood.
Ingredients:
Cookies-
1/4th Cup Almond Butter (since I am in a peanut free house I used almond butter)
1/4th Cup Cashew Butter
1/4th Cup Maple Syrup
1 Tsp Honey*
1 Tsp Vanilla Extract
2 Scoops Vital Proteins Collagen Powder
1/8th Tsp of Baking Soda
3 Shakes of Cinnamon
2/3 Cup Almond Flour
Filling- (optional)
1/4th Cup Nut Butter
1 tbsp Maple Syrup
1/2 Tbsp Chia Seeds
How to:
Set oven to 350 degrees.
Add everything into a bowl and mixed until smooth.
Take a spoon and scoop out big (or little) balls on parchment paper
Place two next to each other and smush them into a peanut 🥜 shape.
Take a fork and make hash marks # on the cookies.
Put in the oven for 12-14 minutes and let cool for 20.
Mix together the filling ingredients and put the mixture in-between two cookies.

These are seriously so easy and delicious and if you don’t believe me ask my coworkers who finished these in seconds.
*If you’re vegan and consider honey to not be vegan you can substitute with 1 date.
