Vegan Birthday Cupcakes
For my roommate’s birthday I wanted to make a healthy vegan vanilla cupcake. I found the recipe online and made a few alterations! I can’t believe I haven’t attempted a vegan cupcake before because these are seriously amazing and so easy to make. Not to mention they look so fun!
Ingredients:
20 dates
2 cups water
2 1/2 cups whole wheat flour
2 1/2 tsp vanilla extract
splash of cinnamon
2 tbs baking powder
1/2 cup unsweetened soy milk
store bought sprinkles and frosting
How to:
Preheat oven to 350 degrees.
In a blender mix the pitted dates and water until smooth.
Add the rest of the ingredients except the sprinkles and frosting.
Line a cupcake tray with cupcake liners.
Mix and distribute into the tray leaving 1/4 room.
Bake for 25 minutes.
Let cool and add frosting and sprinkles.
