Vegan Birthday Cupcakes

For my roommate’s birthday I wanted to make a healthy vegan vanilla cupcake. I found the recipe online and made a few alterations! I can’t believe I haven’t attempted a vegan cupcake before because these are seriously amazing and so easy to make. Not to mention they look so fun!

Ingredients:

  • 20 dates

  • 2 cups water

  • 2 1/2 cups whole wheat flour

  • 2 1/2 tsp vanilla extract

  • splash of cinnamon

  • 2 tbs baking powder

  • 1/2 cup unsweetened soy milk

  • store bought sprinkles and frosting

How to:

  1. Preheat oven to 350 degrees.

  2. In a blender mix the pitted dates and water until smooth.

  3. Add the rest of the ingredients except the sprinkles and frosting.

  4. Line a cupcake tray with cupcake liners.

  5. Mix and distribute into the tray leaving 1/4 room.

  6. Bake for 25 minutes.

  7. Let cool and add frosting and sprinkles.

  8. Enjoy!!
